Raw vegan cheese cake

Good morning!

It's Monday, back to reality for those of us who have not yet finished exams. I had a great weekend of birthday celebrations, but time to get serious for the final stretch. That doesn't mean you can't start the week off right. I bring you today's recipe: my birthday cake and I must say it was a hit with my friends, a raw vegan cheesecake. Here is the recipe:

Ingredients.

For the base:

1/2 cup of almonds
1/2 cup of walnuts
1/2 cup of dates

For the inside:

3 cups of cashews
grated Coconut
1 sprig fresh vanilla
8 dates
4 tablespoons of coconut oil
The juice of 1 1/2 lemon
A pinch of salt

For the topping:

1/2 cup of strawberries
1/2 cup of cherries
Juice of half lemon
4 dates

Steps.

1. The first step is to put the cashews to soak 2-3 hours to soften.
2. Then start with the base. Mix all ingredients in a blender (I used the Thermomix) and spread the resulting paste into a container (glass or plastic) until even.
3. Put the container in the freezer while you do the inside.
4. For the interior, drain the cashews first and put all ingredients in the blender. If necessary to get the blender going, you can add a little water. Beat well and place it on top of the base.
5. Put everything in the refrigerator for 1 hour. Meanwhile, make the topping.
6. For the topping mix all the ingredients and when the hour is over, place it on top of the cake.
7. Leave it in the freezer for 2-3 hours and take it out 20 minutes before serving.

Enjoy!

Roll it up.

Good morning and happy Friday!

It's been a long week, but finally Friday is here. I'll be in Lanzarote these days, preparing the last exams, but better to be at home than anywhere else right? Today I'm posting, rather than a recipe, an inspiration of a very easy and delicious meal for these hot days.
It is my vegetarian version of a Mexican fajita.

1. Choose vegetables that you like to eat raw. I used spinach, carrots, cucumber, snow peas and alfalfa sprouts.
2. Choose a type of tortilla (this is spelt) and spread it with some greek yogurt, add the vegetables, roll it up, and presto!

Protein balls.

¡Listo!

Happy Friday!

In order to finish off the week and start the weekend full of energy, I present to you a recipe for protein balls. Delicious as a snack or pre work out boost. Here it goes!

Ingredients:
1 cup oats.
Chia seeds.
Peanut butter.
Coconut sprinkles.
Nuts.

Steps:
1. Mix the dry ingredients, except the coconut sprinkles in a bowl.
2. With the help of a spoon, add the peanut butter until it gives you a consistency to make balls.
3. This step is a bit messy: with your hands, make the balls, making sure to add water if they get too dry.
4. Put the balls on a flat surface and sprinkle the coconut.
Done!

Smoothie time.

Smoothie moment. Strawberry Banana Soy Smoothie, also called banana-berry. The "Banana Berry" flavor combo is most certainly a classic for a reason: it's delicious!
Spinning a Classic.
This recipe adds in wild blueberries and raspberries, for an antioxidant boost but you can add any customized ingredients to tone up the taste you want.

Banana Berry Smoothie.
makes 2 servings

1/2 cup frozen strawberries
1/4 cup frozen wild blueberries
1/4 cup frozen raspberries
1 fresh ripe banana
1/2 cup fresh organic strawberries
1 cup soymilk (or almond)
Ice.

Directions:

1. Add the soymilk, frozen fruit to blender. Blend until chunky-smooth.
2. Add in the fresh banana. Blend until smooth.
3. Lastly, add in the fresh strawberries and pulse blend for a few more rounds - you don't want to mush up the berries though.

Why the Fresh and Frozen? I like the fresh raw live enzymes that are present in fresh fruits, however I also love the texture of a frozen fruit blend. So I do a combo of the two. Always add the fresh fruit last in your blend to avoid mushiness.

Nutrition. This smoothie is rich in manganese and vitamin C. It is also a good source of fiber and potassium. You can add a scoop of soy or hemp protein powder to give it and extra boost of vegan protein. Add some flax seeds, chia seeds or flax oil to give it a boost of healthy omega fatty acids!

Happy Banana Berry Day!

Overnight oats.

1 yogur griego.
Canela.
Topping al gusto. En este caso he usado fresas.

Procedimiento

Hello sweeties!

In my time between studying I've been getting creative with my kitchen skills and I wanted to share with you one of the most practical and simple breakfast recipes of all: overnight oats. So yummy. When it comes to breakfast, there is no excuse to skip it, it's necessary to jump start our metabolism in the morning and there is no better way that oats to do so. I have a love for warm oats (since I was a kid), but sometimes the every day life catches up with you and you're left with no time to enjoy a long, relaxing breakfast,so you must have a plan prepared. Over night oats needs no time in the morning, you can wake up and take it on the way to work or classes if you want to. It's incredibly good and has the qualities of the best breakfast: complete, oats are an amazing source of energy, it's balanced, quick AND easy. Here it goes!

Ingredients.
  • 2/3 cup almond milk (or milk of your choice).
  • 2/3 cup organic rolled oats
  • 1 Greek yogurt (I used non-fat)
  • 1 pinch of cinnamon
  • Topping of your choice.

Procedure.
1. The night before you plan to eat your oats, mix together all of the ingredients listed above and seal in an airtight container.
2. Refrigerate the mixture overnight (they will be ready in about 3 hours, but overnight is best).
3.Wake up and enjoy the next day!

Orange power.

Hi to all, sweeties!

Today, being Sunday, with its corresponding relax period, is recipe day! Yay! This Sunday I will make your taste buds enjoy with my latest creation: an orange colored juice. Behold the recipe.

Ingredients.

3 carrots.
1 green apple.
5-6 leaves of mint.
Ginger to taste.

Procedure.

1. Wash all the ingredientes, except for the ginger.
2. Peel and chop the carrots and the apple.
3. Put everything in the juicer.
4. Enjoy.

Ginger has a strong taste, so I recommend for the first time you make it, go trying out the taste until you find the right one for you.

This juice, apart from being extremely good, helps our immune system, so it’s ideal for when our defenses are low and for stressful moments. Carrots are a rich source of carotens and vitamin A. This veggie has one of the most powerful natural antioxidants, beracarotene. Apart from that, the proteins in carrots are responsible of creating new muscle mass. As for ginger, this asian condiment has tons of antioxidant proprieties and it’s used to cure all kinds of illnesses. It’s a great plus in every meal.
